The Canadian Meat Council and the Canadian Meat Sciences Association will hold their annual symposium in Quebec City, Quebec from May 29 through June 1, 2012.
Guest speakers will include:
– Alex Gill of Health Canada, who will discuss”Technical Challenges of Testing for non‐O157 STECs.”
– Steve Miller of the University of Guelph, who will discuss “Genomic Profiling for Meat Quality in Beef and Pork,” and
Al Schaefer of Agriculture and Agri-Food Canada, who will be speaking on “Consumer Trends in Meat, With Emphasis on Animal Welfare.”
